Ingredients
- DRESSING:
- 2 limes
- 1 Tbsp. soya sauce OR fish sauce
- 1 Tbsp. sugar
- 1 small jalapeno pepper (seeded and minced OR 1 teaspoon red chili flakes
- Small amount grated fresh ginger
- Salt to taste
- 2 Tbsp. sesame oil
- SALAD:
- 2 ripe but firm mangos
- 2 sweet peppers, one red, one yellow
- 1 medium carrot, coarsely grated
- 2 green onions, thinly sliced
- 1/2 cup chopped mint or coriander
- 8 cups mixed lettuce
- Two handfuls sliced almonds

Step 1
Dressing:
In a small measuring cup, zest one lime and then squeeze both until you have ¼ cup of lime juice.
Add soya sauce/fish sauce, sugar, jalapeno/chili flakes, ginger, and salt. Slowly whisk in the sesame oil, and set aside.
Salad:
Peel and thinly slice mango. Thinly slice peppers. Add carrots, onions and mint/coriander and gently toss together in bowl.
Add lettuce and nuts. Toss well.
Just before serving, slowly add dressing to salad while mixing together.
(You want the salad moist but not oily.)
