Linguini with Spinach, Basil & Pine Nuts

Ingredients
- 1 package (16 oz) Linguini
- 1 cup pine nuts
- 1/2 cup plus 1/4 cup Olive Oil
- 5 large cloves of garlic, minced
- 3/4 tsp dried red pepper flakes
- 12 to 16 oz washed and trimmed spinach leaves, coursley chopped
- 3/4 cup loosely packed chopped fresh basil
- 3/4 cup grated parmesan cheese

Preparation
Step 1
Cook pasta according to package directions. Meanwhile, in a wok or large skillet, saute pine nuts until golden. Remove and set aside. In same pan, heat 1/2 cup olive oil and saute garlic and pepper flakes for 1 mintue. Stir in spinach and toss over high heat until wilted, 2-3 minutes. Do not overcook or it will stick together.
Drain pasta and put into a large bowl. Add remaining 1/4 cup olive oil, spinach mixture, parmesan cheese, pine nuts and salt and pepper to tast. Serve immediately.
