Ingredients
- 4 cups ap flour
- 1/2 cup granulated sugar
- 1 tsp baking soda
- 1 tblsp baking powder
- 1/2 tsp salt
- 1 stick butter cold -- diced
- cut the butter into the dry ingredients until butter is pea sized. works great if you do it in a food processor
- 1 to 1 1/2 cup milk -- I sour the milk with a splash of vinegar)
- 1 egg - beat into the milk mixture

Step 1
I start out using 1 cup to see if more liquid is needed -- you will know if the flour mixture is not holding together with using 1 cup. add more as needed. if you use a food processor you can continue with this part as well.
this will form a nice dough- now you will want to fold in gently your fruit and what ever else you are adding in--I do this part by hand. I eyeball the portion of fruit as you know I like it plentiful ---
form the dough mix into rectangle loaf shape -- brush the top and sides with egg wash -- I sprinkle granulated sugar on the top. Cut loaf down he middle (you will have two portions lengthwise) cut each portion into triangle shapes -- you should get 6-8 scones from each side -- depending how large you cut them.
place scones on baking sheet bake 400 degrees for 20 -25 mins. I check them at around 15 to see how they are doing -- for me I do not like these over baked -- even though traditional scones are hard as a rock it seems -- you will know they are done when they are not doughy in the middle of each scone -- or firm to touch -- not rock hard!
For the icing I do confectionery sugar and milk -- you can decide on consistency -- if you want a clear drizzle or thicker.
