Raisin Delight

Great dessert for the fall or winter. Serve with cream or ice cream.

Also great for breakfast the next day.

Ingredients

  • 3/4 cup brown sugar
  • 1 Tbsp. butter
  • 1 cup raisins
  • 1 cup boiling water
  • 1 Tbsp. butter
  • 1/2 cup sugar
  • 2 tsp. baking powder
  • 1 cup flour
  • 1/8 tsp. salt
  • 1/2 cup milk
  • juice and zest of 1/2 orange, (1/4 cup juice)

Preparation

Step 1

Preheat oven to 350*.

Boil the raisins, butter, brown sugar and water uncovered for 5 to 10 minutes, until the raisins are plump. Cool.

In a mixer, cream the butter and sugar. Add the flour, baking powder and salt alternating with the milk to achieve a smooth batter.

Pour batter into a greased baking dish or bowl.

Add orange juice and zest to raisin mixture and pour over the batter. DO NOT STIR.

Bake at 350* for 30 minutes.
