Peanut Brittle

Ingredients

  • 2 cups sugar
  • 1 cup corn syrup
  • 1/2 cup water
  • 1 cup butter
  • 1 tsp. baking soda
  • 2 cups peanuts

Preparation

Step 1

Combine sugar, corn syrup and water. Cook and stir until sugar dissolves.

When syrup boils, blend in butter, stirring frequently.

When the mixture reaches 230* on a candy thermometer, add peanuts.

When temperature reaches 280*, begin stirring constantly until the temperature reaches 305*.

Remove from heat and add baking soda.

Pour onto greased cookie sheets, PAM works well.

Cool in freezer. Drop pan to crack the brittle.
