Romaine Noodle Salad

Easy and delicious, one of my family's favorites. Be sure to combine and dress only the salad you will need for the night. To avoid the salad going limp, store the unused dry salad, nut mixture, and the dressing in the fridge separately.

Ingredients

  • SALAD:

  • 1

    head romaine lettuce

  • 2

    cups snow peas, cut into 1 inch pieces

  • 4 -5

    green onions, sliced diagonally

  • 1

    cup sunflower seeds

  • 1

    cup sliced almonds

  • 1

    package Ichiban original Chinese noodles, (no substitution)

  • DRESSING:

  • Package of noodle seasoning

  • 3

    tbsp white wine vinegar

  • 1/4

    cup sugar

  • 1/2

    cup olive oil

  • 1/2

    tsp. Dijon mustard

Directions

Salad: Clean and prepare lettuce, snow peas and green onions and put in salad bowl. Break up noodles. Put noodles, almonds and sunflower seeds in separate bowl. Combine with salad greens just before serving. Dressing: Mix together noodle seasoning, vinegar, sugar and mustard. Slowly whisk in oil. Pour over salad mixture just before serving, or serve on the side to maintain crispiness of salad.
