Ingredients

  • For croutons:
  • 2 bagels
  • 3 tbsp. olive oil
  • Salt and pepper to taste
  • Garlic salt to taste
  • For salad:
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, minced
  • 2 tbsp. capers
  • 1 pkg. smoked salmon, sliced into small pieces
  • 2 eggs, hard-cooked and sliced
  • Head of romaine lettuce or mixed greens
  • For lemon vinaigrette:
  • Juice of 2 lemons
  • 4 tbsp. olive oil
  • Salt and pepper to taste

Step 1

To make bagel croutons, cut the bagel into cubes and toss with olive oil. Sprinkle with salt, pepper and garlic salt. Bake at 400 degrees for 5-8 minutes, or until lightly browned, stirring occasionally.

Mix the cucumbers, tomatoes, minced red onion and capers with the smoked salmon. Whisk together the juice of 2 lemons with the olive oil and salt and pepper to taste. Add egg slices. Dress the salad with lemon vinaigrette. Toss the croutons with the salad.
