  • For croutons:

  • 2

    bagels

  • 3

    tbsp. olive oil

  • Salt and pepper to taste

  • Garlic salt to taste

  • For salad:

  • 1

    cucumber, sliced

  • 1

    cup cherry tomatoes, halved

  • 1/2

    red onion, minced

  • 2

    tbsp. capers

  • 1

    pkg. smoked salmon, sliced into small pieces

  • 2

    eggs, hard-cooked and sliced

  • Head of romaine lettuce or mixed greens

  • For lemon vinaigrette:

  • Juice of 2 lemons

  • 4

    tbsp. olive oil

  • Salt and pepper to taste

Directions

To make bagel croutons, cut the bagel into cubes and toss with olive oil. Sprinkle with salt, pepper and garlic salt. Bake at 400 degrees for 5-8 minutes, or until lightly browned, stirring occasionally. Mix the cucumbers, tomatoes, minced red onion and capers with the smoked salmon. Whisk together the juice of 2 lemons with the olive oil and salt and pepper to taste. Add egg slices. Dress the salad with lemon vinaigrette. Toss the croutons with the salad.
