  • 2 cups sifted flour
  • 1/2 tsp salt
  • 1 tbl baking powder
  • 3/4 granulated sugar
  • 1 egg
  • 1 cup milk
  • 4 tbl melted butter
  • 11/2 - 2 cups diced fresh peaches

Step 1

Preheat oven 425 degrees. Sift flour, salt, baking powder & sugar together into bowl. Beat egg well in a pyrex cup. Add to flour along with milk & melted butter. Stir with wooden spoon just enough to combine ingredients. Don't over mix. Peel & dice fresh ripe peaches about the size of sugar cubes & fold into batter. Pour batter into well greased muffin tins about 2/3 full. Bake about 18 to 20 mins or until the muffins are nicely browned.
