Ingredients
- Dressing
- 1/4 cup red wine vinegar
- 3 Tbs Dijon mustard
- 3 garlic cloves, minced
- 1/4 tsp dried thyme
- 3/4 cup olive oil
- Salad
- 1 small head romaine lettuce, torn into bite-size pieces
- 1 cup croutons
- 1/2 cup grated Parmesan cheese
- 1/4 lb smoked salmon, cut into strips
- lemon wedges
Preparation
Step 1
For dressing: Whisk first 4 ingredients in small bowl. Gradually whisk in the oil. Season to taste with pepper.
For salad: Combine first 4 ingredients in large bowl. Add enough dressing to coat; toss well. Divide among plates, garnish with lemon wedges.
(Sara's note: I never make more than 1/2 the dressing recipe, it's plenty for a large salad.)
