Sweet Potatoes and Baked Apple Cranberries

Ingredients

  • 6 med. size sweet potatoes
  • 1 c. sugar
  • 2 c. fresh/ frozen cranberries
  • 1 large apple
  • 1/2 c. light brown sugar
  • 1/8 tsp. ground cinnamon
  • 1/4 c. butter
  • 1/2 c. orange juice or H20

Preparation

Step 1

1) Boil sweet potatoes- (Puncture skin) covered with h20 boil then simmer until skin can be pierced with fork. Cool and peel off skin. cut into 1/2" slices each.
2) Spray 13"x9" baking dish (esp glass) with Pam. Layer sweet potatoes (1/2 amount)
3) IN saucepan combine 1/2 c. H20 and 1 c. sugar and cranberries, cook until berries have pooped
4) On top of sweet potatoes put apple slices add 1/2 cranberries mixture then another 1/2 sweet potatoes and remaining cranberry mixture.
5) Sprinkle with brown sugar and cinnamon and dot with 1/4 c. butter
6) Pour 1/2 c. orange juice over
