Perfect Pot Roast

Ingredients

  • Vegetables:
  • 4 tbsp vegetable oil
  • 2-3 lb beef chuck roast
  • 1/2 tsp celery salt
  • 1/2 tsp onion powder
  • ground black pepper
  • 1/2 cup red wine
  • 2 cups beef broth
  • 2 tbsp minced garlic
  • 1 tsp dried thyme
  • 2 bay leaves
  • 1 tsp salt
  • 6 small redskin potatoes, halved
  • 2 small onions, peeled and quartered
  • 2 cups baby carrots
  • 2 stalks celery, cut into 1 inch pieces
  • 2 tbsps corn starch

Preparation

Step 1

1. Add oil to pressure cooker and heat on high
2. Sprinkle top of roast with 1/2 the celery salt, onion powder and small pinch of pepper
3. Place the roast, seasoned side down in pressure cooker to brown. Sprinkle the other half of celery salt, onion powder and pinch of pepper on bottom while top browns. Do bottom next
4. Pour in red wine, stab roast with a meat fork and push the meat around to release glaze
5. Add beef broth, garlic, thyme, bay leaves and salt
6. Lock and cook 40 mins
7. Do quick release and add vegetables. Cook for additional 5 mins
8. Quick release
9. Combine corn starch wih 2 tbsp water to make gravy
