Chocolate Marshmallow Logs

Very festive dessert and a favourite of kids of all ages.

Ingredients

  • 4 ounces semi-sweet chocolate
  • 2 Tbsp. butter
  • 1 cup icing sugar
  • 1 egg, beaten
  • 1 cup nuts
  • 1 cup small coloured marshmallows
  • 1 pkg. finely shredded semi-sweet coconut

Preparation

Step 1

Lay out two 12-inch sheets of waxed paper and sprinkle coconut on them.

In a medium saucepan, melt the chocolate with 2 Tbsp. butter. Remove from heat.

Mix together the icing sugar, egg, nuts and marshmallows.

Combine the marshmallow mixture with the chocolate and stir quickly so as not to melt the marshmallows. Pour half of the mixture on each sheet of waxed paper and roll into a log.

Refrigerate until ready to serve.
