Asparagus Frittata

Ingredients

  • Batch of asparagus
  • 1 jar artichoke heats
  • 6 eggs
  • 3/4 c chopped red & green peppers

Preparation

Step 1

Preheat oven to 400 degrees.

In an oven safe skillet, toss asparagus, drained artichoke hearts and chopped peppers. Cook and stir untile heated through.

Pour 6 beaten eggs over the veggies and cook for 3 minutes.

Pop in oven for 10 minutes.
Serve topped with greated Parmesan cheese.
