Chain Gang Chili

Ingredients

  • Pulled Pork
  • Rub the pork with spice rub, cover with plastic wrap and refrigerate overnight.
  • Braising Liquid
  • 4 cups water
  • 1 cup apple cider vinegar
  • 1/2 cup molasses
  • 2 onions, sliced
  • 1/4 tsp red pepper flakes
  • 4 garlic cloves
  • 4 bay leaves
  • Bring to a boil.
  • Pour over pork. Cover with parchment and foil. Roast until meat reaches 200 degrees.
  • Chili
  • Vegetable oil
  • 8 onions, chopped
  • 20 cloves garlic, minced
  • 3/4 cup chili powder
  • 1/4 cup smoked paprika
  • 1/8 cup cumin
  • 1/8 cup oregano
  • 3 Dos Equis Amber Beer
  • Water
  • Braising liquid
  • 1 can crushed tomatoes
  • Pulled pork
  • 10 pounds browned ground beef
  • 1 can poblanos, pureed
  • 10 serranos, pureed
  • 1/4 jar pickled jalapenos
  • 2 cans kidney beans
  • Small bowl salt

Preparation

Step 1

Saute onions until translucent; add garlic, sauté until browned. Add chili powder, smoked paprika, cumin and oregano. Cook until fragrant, about 30 seconds. Deglaze with beer and water. Add braising liquid, crushed tomatoes, pulled pork, ground beef, chilies, kidney beans and salt. Cook for 1 hour.

Tighten up with masa slurry.
