Ingredients

  • 2 cups water
  • 2 tablespoons olive oil divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup uncooked long grain rice
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon grated lime peel
  • 2 tablespoons lime juice
  • 1 tablespoon taco seasoning
  • Four boneless skinless chicken breast 4 ounces each
  • Optional toppings: Pico to Gallo shredded cheese sour cream

Preparation

Step 1

1. bring water 1 tablespoon oil salt and pepper to a boil add rice reduce heat simmer covered 1517 minutes or until liquid is absorbed remove from heat stir and cilantro lime peel and juice
2. Season chicken in a skillet heat remaining oil over medium heat cook chicken four minutes per side or until 165°
3. To serve top the rice with sliced chicken and desired toppings
