Watermellon Margarita Jelly Shots

Ingredients

  • ~ 2 C cubed seeded watermelon (about 3/4 lb)
  • ~ 1/4 C frozen (thawed) limeade concentrate
  • ~ 1 tsp grated lime peel
  • ~ 1/4 C cold water
  • ~ 2 envelopes unflavored gelatin
  • ~ 1/2 C agave (silver) tequila
  • ~ 2 TBSP orange-flavored liqueur
  • Garnish
  • ~ 15 small watermelon slices
  • ~ 15 lime slices
  • ~ shredded lime zest

Preparation

Step 1

1. In food processor or blender, puree 2 cups watermellon until smooth. Place fine-mish strainer over glass measuring cup; our watermellon pulp into strainer. Press pulp with back of spoon (juice should equal about 1 cup). Discard pulp; set juice aside.

2. In 1-quart saucepan, mis limade concentrate and grated lime peel. And cold water. Sprinkle gelatin over liquid to soften. Heat over low heat, stirring constantly, until gelatin is dissolved, about 5 minutes. Remove from heat; strain into medium bowl.

3. Add watermelon juice, tequila and liqueur to gelatin mixture;stir until well blended. Pour into lightly greased 8x4-inch glass dish. Refrigerate 2 hours or until set.


4. Cut into 5 rows by 3 rows. Dip dish in warm water, just to rim, 20 to 30 seconds to loosen from bottom. Use a smallspatula to remove squares. Serve each jelly shot on watermelon slice and lime slice; garnish with lime zest strrips. Store in refrigerator.
