Ingredients

  • 1 Boneless, skinless chicken breast (8 oz)
  • 1/2 tbs Chili Powder
  • 1 tsp light or dark brown sugar (optional)
  • 1/2 tsp coriander
  • 1/2 tsp ground cumin
  • Kosher salt or sea salt
  • 6 tbs olive oil
  • 2 tbs plus 2 tsp fresh lime juice
  • 1 tbs plus 2 tsp chopped fresh cilantro
  • 2 tsp honey or agave
  • Fresh ground pepper
  • Green tabasco or habanero (optional for spice kick)
  • 1 cup canned organic black beans, rinse & drained
  • 4 oz small cherry tomato or grape, halved
  • 1 large scallion thinly sliced
  • 2 small heads Bibb lettuce (or mixed greens)
  • 1 avocado
  • 1/4 cup toasted pine nuts

Instructions:



Cook chicken breast on grill, oven or pan as usual... combining the chili powder, brown sugar (optional), coriander, cumin, salt -- rub on chicken then cook (you won't need it all).



Dressing... combine olive oil, lime juice, 1 tbs of cilantro, honey/agave, sales, pepper and hot sauce... whisk & combine



Salad... combine black beans, tomato, scallion, remaining cilantro, salt together... then arrange lettuce, avocado, tomato, chicken and bean mix on top with pine nuts and dressing, garnish with left over cilantro.
