Butternut Squash and Sweet Apple Sausage Soup

Ingredients

• 1 TB olive oil
• 1 TB butter
• 1 package of Trader Joe's sweet apple chicken sausage, diced
• 1 onion, chopped
• 2 carrots, chopped
• 3 cups butternut squash, cubed
• 4 cups chicken broth
• 2 oz cream cheese (about 1/4 package)
• 1 tsp sage
• 1/2 tsp cinnamon
• 1/4 tsp nutmeg
• salt and pepper

Preparation

Step 1

Heat olive oil and butter in pot. Brown sausage and set aside.

Saute onions.

Add carrots, squash, chicken broth, and seasonings. Cook until carrots and squash are tender.

Add cream cheese, then puree soup in blender. Return to pot and add sausage.
