Ingredients
- 1 stick butter, softened
- 1/3 cup masa harina
- 1/4 cup water
- 1-1/2 cup frozen corn, thawed
- 1/4 cup corn meal
- 1/3 cup sugar
- 2 TBS heavy cream
- 1/4 tsp salt
- 1/2 tsp baking powder
Preparation
Step 1
1. Blend butter in a medium bowl with an electric mixer until creamy. Add the masa harina and water to the butter and beat until well combined.
2. Put defrosted corn in a blender or a food processor, and with a short pulse, coarsely chop the corn on low speed. You want to leave several whole pieces of corn.
3. Stir corn into butter mixture, add corn meal, and combine
4. in another bowl, mix together sugar, cream,
Salt, and baking powder..When all mixed; pour the mixture into the other bowl and stir by hand.
5. pour corn batter into a ungreased 8 x 8 baking pan, cover with foil. Place this pan into a 13 x 9 pan filled with 1/3 of the way with hot water. Bake @ 400 for 30 to 60 min, or until corn cake is cooked through. Remove from water pan and let cool for 10 mins
