Apple Nut Coffee Cake

Ingredients

  • Shortening
  • 1 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup shortening
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 large apple
  • 1/2 cup sour cream
  • 1/4 cup nuts, chopped (grind in food processor)
  • 1/4 cup brown sugar, packed
  • 1 tbsp. butter
  • 1/2 teaspoon ground cinnamon

Preparation

Step 1

Grease pan with shortening. In medium bowl, stir together flour, baking powder and soda, and salt.
In a large mixing bowl use a wooden spoon to beat together regular sugar and the 1/4 cup shortening until fluffy. Beat in egg and vanilla until well blended.
Peel apple, remove core, and chop
Stir about half the flour mixture into sugar mixture. Stir in sour cream. Stir the rest of the flour mixture.
Stir in chopped apple and spread evenly in the greased pan, scraping bowl with a rubber spatula
In a small bowl, mix nuts, butter, cinnamon, and brown sugar until crumbly. Sprinkle over coffee cake.
Place in oven at 350 degrees and bake 25-30 minutes or until done or knife is clean when inserted in the middle of the cake
Cool slightly
Cut into squares. Serve warm
