Cafe Mingo Sugo di Carne

Ingredients

  • 5 lb beef bottom round, cut into 2" pieces
  • 1 cup unsalted butter
  • 1 bottle chianti
  • 3 sweet red onions,sliced
  • 1 28 oz can peeled tomatoes
  • 1 cup espresso
  • Salt and pepper to taste

Preparation

Step 1

Season meat. On medium high heat, brown meat in all sides. Remove meat from pan and set aside. Lower heat to medium and add butter. After butter has melted add, add the onions and sauté for 5 minutes. Return meat to pan with the onions and add wine, tomatoes and espresso. Cover and cook in a 400* oven for 4 hours. Remove meat and cool. Pass remaining sauce through food mill. Shred the meat and add to sauce. Adjust for seasoning with salt pepper and additional butter. Toss with al dente penne and enjoy!
