Willayne's WonderfulCoconut Cake/Glaze
- 1 cup vegetable oil
- 2 cups sugar
- 4 eggs
- 2 1/2 cups self rising fklour
- 1 cup buttermilk
- 1 cup or more coconut
- 1 tsp vanilla or coconut flavoring
Beat together oil and sugar, add eggs on at a time, beating well after each addition.
Sift flour 2-3 times. Add flour, and milk alternately to sugar mixture beginning and ending with flour,. Fold in coconut and flavoring. Pour into greased floured tube pan.
Bake 45 to 50 minutes at 350
1/2 cup water
1 cup sugar
1 tsp coconut flavoring
Combine ingredients in a small saucepan. Bring to a boil and cook one minute, Pour glaze over warm cake (as it comes out of the oven.) Leave in oven for 10 minutes. ( I punch holes in top of cake)
Remove from oven and let cake cool in pan 1 hour before removing from pan
