Filipino Sponge Cake (mamon)

  • 6 eggs (separate yolk from white)
  • 1 cup cake flour
  • 1 tsp baking powder
  • 1 tsp cream of tartar
  • 1 cup white sugar
  • 1 tsp vanilla
  • 1/2 cup vegetable oil
  • spray PAM on mamon mold or regular muffin pan



Step 1

Preheat oven 350 degrees

Sift cake flour and baking powder in a bowl; set aside

Beat egg whites and cream of tartar until very foamy like meringue
but not stiff.

Add sugar graudally and continue beating.

Add vanilla and vegetable oil.

Add egg yolks one at a time and continue beating.

Add cake flour and baking powder mixture and continue mixing.

Spray mold with pam spray and pour mixture 2/3 full.

for 12 - 15 min or until golden brown or test doneness with toothpick
in middle part of muffin
