Kulibiaka - Russian Pie for 150+

Ingredients

  • fresh or cooked salmon - enough to cover the bottoms of 3 insert pans
  • 18 + fillets tilapia or other white fish
  • 9 pkgs. creamed spinach
  • 6 cups prepared Hollandaise sauce (powder based)
  • 6 sheets puff pastry, thawed
  • 1 egg/water

Preparation

Step 1

Spread salmon on bottom of insert pans (remove all bones). Cover with creamed spinach. Layer fish fillets over the spinach. Spread Hollandaise sauce eveny over fish fillets.

Roll out two puff pastry sheets for each pan. Cover each pie with puff pastry - trim and seal.

Wash top with egg/water mixture (pour the mixture through a fine sieve before using). Create decorative slits in the tops of the pies.

Bake at 375 degrees for about 20 minutes.

Keep in warmer until service.
