Judy's Strawberry and Rhubarb Pie

Ingredients

  • 1-1/4 cups white sugar
  • 1/4 cup flour
  • 1 cup sour cream
  • 3-1/2 cups diced rhubarb
  • 1-1/2 cups sliced strawberries
  • 1-10-inch unbaked pastry shell
  • 1/2 cup brown sugar, packed
  • 1/2 cup flour
  • 1/4 cup cold butter

Preparation

Step 1

Pre-heat oven to 450˚ F. In a large bowl, combine white sugar, 1/4 cup flour, sour cream, rhubarb and strawberries. Pour into the unbaked pie shell.

In a small bowl, mix together the brown sugar and 1/2 cup flour. Cut in the butter until the mixture is crumbly. Sprinkle on top of the pie.

Bake for 15 minutes.

Reduce heat to 350˚ F and continue baking for another 30 minutes.

Serve warm or cold.
