Banana Fruit Mini Loaves

Ingredients
- 2 eggs
- 2/3 cup sugar
- 1 cup mashed bananas (about 2 medium)
- 1-3/4 cups all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup mixed candied fruit
- 1/2 cup raisins
- 1/2 cup chopped walnut

Step 1
1. In a bowl, beat eggs and sugar. Add bananas; mix well. Combine the flour, baking powder and salt; gradually add to egg mixture. Fold in fruit, raisins and walnuts. Transfer to three greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 350° for 30-35 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Yield: 3 mini loaves.
