JIm's Chocolate Mayonnaise Cake

Ingredients

  • 3 cups all-purpose flour
  • 1-1/2 cups sugar
  • 2/3 cup unsweetened cocoa
  • 2-1/4 teaspoons baking powder
  • 1-1/2 t baking soda
  • 1-1/2 cups mayonnaise
  • 1-1/2 cups warm water
  • 1-1/2 t vanilla
  • 1/4 cup chocolate chips

Method:

Preheat oven to 350˚F.

Sift together flour, sugar, cocoa, baking powder and soda into a large bowl. Stir in mayonnaise gradually. Stir in water, vanilla and chocolate chips until smooth.

Bake in 2 layer cake pans for 30 minutes.

Remove from pans and cool, put together with chocolate icing. Cake may also be baked in a bundt pan. Adjust cooking time accordingly. Test for donenesss with a wooden skewer; when skewer comes out clean from the center of the cake, the cake is done.
