Maple Syrup Baba

Ingredients

  • 1 t sugar
  • 1/2 cup lukewarm water
  • 1 pkg. fast-rising yeast
  • 1-1/2 cups all-purpose flour
  • 1/2 cup butter
  • 1/4 cup sugar
  • 4 eggs, beaten
  • 1/2 t salt
  • 1-1/2 cups maple syrup
  • 1/3 cup water
  • 1 T rum or rum flavoring

Method:

• Dissolve 1 t sugar in the 1/2 cup lukewarm water. Sprinkle yeast on top . Let stand 10 minutes. Stir well. Beat in the 1/2 cup flour thoroughly. Cover and let rise out of a draught at 85˚ till double in bulk - about 1/2 hour.
• Cream butter and sugar. Beat in eggs alternately with remaining flour and salt until batter is smooth. Beat in yeast mixture. Turn into greased medium 7 or 8-inch tube cake pan, filling it half full. Cover and let rise until double in bulk, 1/2 to 1 hour.
• Bake in moderate oven until nicely browned. Cool in pan, then turn onto pie plate.
• Bring syrup and water just to a boil. Cool to lukewarm and add rum.
• Prick Baba all over with skewer and pour syrup over it. Let stand and baste occasionally until most of the syrup has been absorbed. Decorate with whipped cream.
