Ingredients
- POACHING LIQUID
- 1 1/2 cups of Chardonnay
- 1 1/2 cups clam juice
- 1/2 cup water
- 1 lemon, cut in half
- 1 orange, cut in half
- 2 bay leaves
- 1 tsp. black peppercorns
- 1 tsp. dried thyme
- 1 tsp. dired tarragon
- SALMON
- 4 (6-oz) fillets wild salmon, skinned
- 3 cups poaching liquid
- 1/4 lb fresh peas

Step 1
Combine all ingredients in a saucepan and simmer for 15 minutes. Strain.
