Ingredients
- 1/2 cup pineapple juice
- 1/2 cup 7- up
- 1 1/2 cups butter
- 3 cups sugar
- 5 eggs
- 3 cups cake flour
- 1 tsp vanilla
- 1 tsp lemon extract
Preparation
Step 1
Preheat oven to 350*
Sift dry ingredients. Cream butter and sugar, add the eggs one at a time beating till fluffy after each. Add the extracts and then alternate the flour mixture with the mixture of juice and 7-up. Pour batter into a prepared tube pan, or 3 cake pans. Bake for 55 minutes for tube pan or 25-30 minutes if layer cake. Frost with a pineapple and cream cheese frosting like you would use for a carrot cake.
