Lemon Bars

Ingredients

  • Dough
  • 1 c. butter
  • 2 c. flour
  • 1/2 c. confectioner's sugar
  • Lemon topping
  • 4 eggs
  • 2 c. granular sugar
  • 4 tbsp. flour
  • 1/4 c. lemon juice
  • 1 tbsp. lemon rind

Preparation

Step 1

1. Mix butter, flour, and confectioner's sugar until thoroughly combined. Pack and press into pyrex plate as evenly as possible. Bake at 325 degrees for 18-20 minutes.

2. In large mixing bowl beat together 4 eggs. Add in sugar, flour, lemon juice and lemon rind. Combine thoroughly.

Pour mixture into pyrex plate and bake at 325 degrees for another 2 minutes. Lemon mixture should thicken and solidify as well as be lightly golden brown. Important to make sure oven rack is even as possible to make bars even.

Remove from oven and let cool. Take knife and cut into bars. PLace on serving tray and dust with confectioner's sugar.
