Fried Green Tomatoes with Crab and Ravigote Sauce

Ingredients

  • Fried Green Tomatoes
  • 2 green tomatoes, sliced, 1-inch thick
  • 1/3 cup Louisiana hot sauce
  • 2 cups flour
  • 1 egg
  • 1 1/2 cups milk
  • 2 cups 3-2-1- breading*
  • 1/2 cup canola oil
  • 2 tablespoons butter
  • Breading
  • 3 cups flour
  • 2 cups corn flour
  • 1 cup corn meal
  • 1/2 cup cornstarch
  • 2 tablespoons kosher salt
  • 2 tablespoons black pepper
  • 2 tablespoons dry thyme
  • 3 tablespoons paprika
  • 2 tablespoons chili powder
  • 2 tablespoons dry oregano
  • Hot Butter sauce
  • 1/3 cup Crystal hot sauce
  • 1/3 cup cream
  • 1/2 pound unsalted butter, cut in small pieces, very cold
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh ground black pepper

Preparation

Step 1

Tomatoes:

Place sliced tomatoes in a non reactive pan and coat with hot sauce. Allow to set for 30 minutes. Drain tomatoes and dredge with flour.
Mix milk with egg to make egg-wash, then add tomatoes to the egg wash and dip in 3-2-1 breading. Heat oil and butter in a large skillet.
Fry tomatoes until evenly browned then place on a pan, layered with paper towels and put in a 250 degree oven for 5 minutes. Serve with Hot butter sauce and top with crabmeat and Ravigote sauce if desired

Breading

Blend all ingredients together well to mix. Store covered or in a air tight plastic bag

Hot Butter Sauce


In a stainless sauce pot add hot sauce and reduce by 1/2. Add cream and bring to a boil, reduce slightly. Whisk the cold butter
into sauce gradually to incorporate. Remove from heat, adjust seasoning. Hold sauce on a warm area of the stove top.
