Mashed Red Potatoes with Onion and Chive

Ingredients

  • 1 1/2 lb red skinned potatoes, cubed
  • 1/2 medium onion, diced
  • 1/2 cup half and half, warmed
  • 2 Tbsp unsalted butter, melted
  • 1 Tbsp minced fresh chives
  • Salt and Pepper to taste

Preparation

Step 1

Cook potatoes and onion in a pot of boiling salted water until potatoes are fork tender, about 12-15 minutes. Drain potatoes and onion; return to pot over medium heat and cook, stirring often, to remove excess moisture, about 1 minute.

Stir in half and half and butter, then beat mixture with a hand mixter on low speed until smooth. Stir in chives and season with salt and pepper.
