A simple summer pasta salad that will help you clear out your veggie drawer!

Ingredients

  • Ingredients:
  • Pasta Primavera Salad
  • 12 oz. pasta (fusili will hold the dressing best, but any pasta works)
  • 1/2 can black olives
  • 2 chopped green onions
  • 2 diced carrots, lightly steamed
  • 1/2 C snow peas
  • 1 bunch broccoli, lightly steamed
  • 1 pint cherry tomatoes
  • (Any vegetable you like to swap in or out works, these are just some ideas.)
  • Dressing:
  • 2/3 C Olive Oil
  • 1/4 C lemon juice
  • 3 minced garlic cloves
  • 2 T basil
  • 1/4 C red wine vinegar
  • 1 t salt
  • 1/2 t ground pepper
  • 2 T dijon mustard

Preparation

Step 1

1. Cook the pasta according to package directions, leaving slightly al dente. Chill pasta.
2. Mix all dressing ingredients in a bowl or measuring cup.
4. Add veggies to the pasta.
5. Add dressing to the pasta.
6. Chill before serving. Holds well for several days in the fridge.
