Ingredients
- 2 teaspoons vegetable oil
- 2 cups vidalia onion, chopped
- 2 cloves garlic, minced
- 1 1/2 cups arborio rice
- 29 ounces chicken broth
- 1/2 cup feta cheese
- 1/3 cup fresh parsley
- 1/4 cup parmesan cheese
- pepper
Preparation
Step 1
1. Saute onion and garlic in oil 1 minute. Add rice. Add 1/2 cup broth, cook until nearly absorbed, stirring constantly. Add rest of broth 1/2 cup at a time, stirring until nearly absorbed before adding more. Take off heat.
2. Add 1/4 cup feta, parsley and parmesan. Garnish with rest of feta and and pepper.
