Penne a la Vodka

Ingredients

  • 1 lb. mushrooms (sliced)
  • 1 medium onion (diced)
  • 2 tbsp. butter
  • 1 1/4 sticks butter
  • 3 cups heavy cream
  • 6-8 plum tomatoes (puree in food processor)
  • 1 small can tomato paste
  • 1/2 cup vodka
  • 3/4 cup grated pecorino cheese
  • 3 tsp fresh chopped parslay
  • dash o chili powder
  • up to 2 lbs penne pasta

Preparation

Step 1

In skillet saute mushrooms and onions in 2 tbsps. melted butter. Cook until all liquid is gone.

Melt 1 1/4 sticks butter, add cream, plum tomatoes, tomato paste, mushrooms and onions, bring to a slow boil, and then simmer for 12 minutes.

Add vodka, cheese, parslay, and chili powder- simmer this for 5 minutes.

Serve over penne pasta with some sauce on the side.
