Tomato, Cucumber, and Onion Salad with Feta Vinaigrette

Ingredients

  • 4 beefsteak tomatoes, thinly sliced
  • 2 cucumbers, halved lengthwise and thinly sliced
  • 1/2 large red onion, thinly sliced
  • salt and pepper
  • 1 cup olive oil
  • 2 tablespoons dried oregano
  • 1 tablespoon minced garlic
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red wine vinegar
  • pepper, to taste

Preparation

Step 1

1. Arrange tomato, cucumber, and onion on a serving platter. Season.

2. Puree remaining ingredients. Spoon over vegetables and serve.

Notes: Really delicious! More than the sum of its parts. Used CONSIDERABLY less olive oil - maybe 2-3 tbsp? Just delicious and a definite repeater. Would be good for company.
