Ingredients
- 1 cup maple syrup
- 3 tablespoons light brown sugar
- 1 1/2 tablespoons Dijon mustard
- 3 tablespoons cracked black peppercorns
- 1 tablespoon kosher salt
- 1 boneless skinless turkey breast (3 to 3 1/2-pound)
- 1/2 cup butter, cut into 8 slices
Preparation
Step 1
1. Combine syrup-mustard in saucepan. Cook until sugar dissolves, stirring constantly.
2. Mix peppercorns with salt in a shallow dish. Roll turkey in seasoning to coat. Place on a rack in a roasting pan; insert a meat thermometer into the thickest portion.
3. Roast at 325 for 15 mins; brush with glaze. Roast 5 mins. Top with 4 slices butter. Roast 15 mins, brush again with glaze. Roast 5 mins.
4. Place 4 slices butter on turkey, roast 15 mins or to 150 degrees. Remove from oven, brush again with glaze; turkey will continue to cook and should reach 160 degrees. Let stand 15 mins before carving.
5. Combine pan drippings with remaining glaze. Cook 3-5 mins or until slightly reduced. Spoon over turkey. Serve warm or at room temperature.
Notes: Very good. Not the quintessential turkey breast recipe, but worthy of a repeat.
