POH was founded by Ruth Brinker in 1985. After taking food to an AIDS-stricken friend too weak to cook, Brinker, a grandmother at the time, "felt compelled to start a meal service to provide people with the kind of nutrition they obviously needed." Though working full-time, she commandeered a city lot to grow organic vegetables and wangled the use of a church kitchen to cook in quantity. Today, clients receive meals plus a weekly bag stuffed with pasta, rice, fruits, vegetables, milk, butter and cheese. A dietitian provides free nutrition counseling and psts healthful recipes - many vegetarian ones - on POH's web site.
