Pepperoni Pan Pizza

Ingredients

  • 1 lb fresh prepared pizza dough
  • 1/4 cup olive oil, divided
  • 2 garlic cloves, minced
  • 2 tsp dried italian seasoning
  • 1 28oz can crushed tomatoes
  • 2 tsp granulated sugar
  • 1/2 tsp crushed red pepper
  • 1 tsp kosher salt
  • 12 oz sliced pepperoni (1/8inch thick slices), divided
  • 1 1 lb block mozzarella, cut into 1/2 inch cubes divided

Preparation

Step 1

place dough in a large greased bowl. cover with plastic wrap; let stand on counter 1 to 2 hours. heat 1 tbls oil in a small sauce pan over medium. add garlic and italian seasoning; cook stirring often, until fragrant, about 1mins. stir in tomatoes, sugar and red pepper; bring to a boil, and let simmer until concentrated about 30mins. stir in salt. set aside to cool

preheat oven to 500 with rack positioned at the very bottom. coat a 13x9inch nonstick baking pan with 3 tbsp oil. place dough in pan; gently stretch until dough reaches corners.

layer 8 ounces pepperoni evenly on dough. scatter half the cheese cubes on top, all the way to edges of pan. dollop tomato sauce evenly on top. scatter remaining cheese cubes over sauce, and top with remaining pepperoni.

bake on bottom rack until bubbly and golden, and crispy cheese crust forms, 10 to 15mins. loosen edges with spatula, and transfer to cutting board to slice.
