Spanish Chicken

Ingredients

  • 4 chicken leg quarters
  • Stock Mixture: 1/2 cup chopped onions
  • 1/4 cup chopped celery
  • 1/2 cup chopped green pepper
  • 2 TBS soy sauce
  • 1 TBS jerk seasoning
  • minced garlic, black pepper
  • 2 TBS honey
  • 1/2 of small bottle or can of green chiles
  • 1 TBS chile powder

Preparation

Step 1

Cover chicken with water and cook in crock pot for four hours

After chicken is done, let cool for one hour. De-bone chicken

In frying pan with a little oil add fresh ingredients from above in same amounts as above. Don’t add honey or chile powder. Put chicken in after briefly softening the
chopped veggies. Add ketchup, 8 – 10 finely chopped black olives, and ½ package of taco seasoning. Add some of the broth from crock pot to make the mixture a little wet. Cook for about half an hour.
Great over rice.
