Steve's Pea Soup
- 1 tablespoon olive oil
- 1 tablespoon margarine
- 1 onion sliced up
- 1 garlic clove, sliced
- 2 carrots sliced
- 1 package of fresh dried peas
- 1 or 2 quarts of water
- veggie or chicken stock
Heat the olive oil and margarine in a soup pot. Add onions, carrots, garlic and cook for about five minutes, until the onions are soft.
Soak the peas for at least three hours. Clean, add to the soup pot with the water.
Bring to a boil, and skim off the top.
Let simmer for about an hour. Add pepper.
Puree in a blender.
