Twice baked sweet potatoes

  • Toppings:
  • 3 lbs scrubbed and dried sweet potatoes (6)
  • evoo
  • 4 t room temp butter cut into pieces
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • pinch cayenne
  • salt
  • 2/3 c pepitas tossed with salt and evoo
  • or
  • 2/3 c chopped pecans mixed with 2t butter and 1 tsp sugar
  • or
  • 2/3 c mini marshmellows



Step 1

1) preheat oven to 375. rub potatoes with evoo and place on rimmed baking sheet, bake til tender about 45-50 minutes. let cool slightly. increase oven temp to 400

2) halve the potatoes length wise. scoop the flesh from 8 halves add to bowl. scoop flesh from remaining 4 and add to bowl..discard those skins. mix butter, cinnamon, ginger, cayenne and tsp salt with potatoes. fill the 8 skins.

3)top potatoes and bake an additional 10 minutes
