Ingredients
- 1/4 cup lime juice
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon molasses
- 4 cups broccoli florets
- 1/2 red bell pepper, sliced
- 1/2 pound spaghetti, halved
- 1 tablespoon canola oil
- 2 teaspoons ginger root, minced
- 2 teaspoons minced garlic
- 1 teaspoon minced jalapeno
- 1 cup snow peas, thawed
- 1/4 cup scallion, sliced
- 2 tablespoons cilantro
- 2 eggs, beaten
- 1/8 cup peanuts, chopped
Preparation
Step 1
1. Mix lime-molasses.
2. Steam broccoli 2 mins. Add pepper. Steam 2-3 mins. Rinse under cold water.
3. Cook pasta and drain.
4. Saute ginger-chili in hot oil 1 min. Add veggies-cilantro. Heat through. Remove from pan and keep warm.
5. Add eggs to pan. When begin to cook, add pasta and lime juice. Toss well. Add veggies. Toss. Garnish with nuts and cilantro.
