Glazed Pork Medallions

By

Easy and excellent, first tried 7-14-2010. Served with broccoli with carmelized onions and pine nuts (see vegetables) and sliced tomatoes.

  • 4

Ingredients

  • 1 pork tenderloin ( 1 1/4 pounds)
  • 1/4 tsp. salt
  • 1/3 cup reduced-sugar orange marmalade
  • 2 tsp. cider vinegar
  • 2 tsp. Worcestershire sauce
  • 1/2 tsp. minced fresh gingerroot

Preparation

Step 1

1. Cut the pork into 1-inch slices and flatten to 1/4 inch thickness; sprinkle with salt. In a large nonstick skillet coated with cooking spray, cook pork in batches over medium-high heat until juices run clear. Reduce heat to low; return all meat to pan.

2. Combine the remaining ingredients; pour over pork and turn to coat. Heat through.

**I have doubled the recipe using 2 pork tenderloins and double the sauce, and comes out great.
