Very Cranberry Muffins

Ingredients

  • 1 cup quick-cooking oats
  • 3/4 cup skim milk
  • 1 1/2 cups whole wheat pastry flour
  • 1 Tablespoon baking powder
  • 1/4 cup sugar
  • 1 cup whole berry cranberry sauce
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped walnuts (optional)

Preparation

Step 1

1. Combine oats and milk. Set aside for 15 minutes.

2. Combine flour, baking powder, and sugar and stir to mix well. Add the oat mixture and the remaining ingredients and stir until dry ingredients are moistened. Coat muffin cups with nonstick cooking spray and fill 3/4 full with batter.

3. Bake at 350 degrees for about 18 minutes or until a wooden toothpick inserted in the center of a muffin comes out clean. Remove the muffin tin from the oven, and allow it to sit for 5 minutes before removing the muffins Serve warn or at room temperature.

Notes: Delicious! Not as cranberried as I thought they'd be but quite good. Had to add a splash of milk. Next time would add some cinnamon and maybe some cloves. Salt?
