Spicy Street Corn Salad

Ingredients

  • 1/2 c mayonnaise
  • 1/4 c chopped fresh chives
  • 1/4 c chopped fresh cilantro leaves and tender stems and 1/2 c whole leaves and tender stems
  • 1 small jalapeño, seeded and finely chopped
  • 1 T lime zest + 1/4 c juice
  • 1 t chili powder
  • 3/4 t pepper
  • 1/2 t kosher salt
  • 6 oz. cotija cheese, crumbled (1-1/2 c), divided
  • 1-15.5 oz. can pinto beans, drained and rinsed
  • 3 c fresh corn kernels (4-5 ears)
  • 3 c loosely packed arugula

Preparation

Step 1

Whisk together mayonnaise, chives, chopped cilantro leaves and stems, jalapeño, lime zest and juice, chili powder, pepper, salt, and half of the cheese and a large bowl until combined. Add beans, corn, arugula, remaining cheese, and whole cilantro leaves and stems and toss to combine.
