Ingredients
- 2 tablespoons butter
- 2 red onions, halved and thinly sliced
- 3/4 cup red wine
- 2 tablespoons balsamic vinegar
- 1/4 cup brown sugar, firmly packed
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt, divided
- 1 teaspoon freshly ground black pepper, divided
- 1 1/2 pounds ground beef
- 1/2 cup bread crumbs
- 2 cloves garlic, minced
- 1 large egg
- 4 large hamburger buns
- fresh spinach leaves
- 4 ounces blue cheese, crumbled

Heat butter in a skillet over medium heat. Add onions and cook until translucent, about 10 minutes. Add wine, vinegar, sugar, thyme, 1/2 tsp. each salt and pepper. Bring to a boil, then reduce heat. Simmer, uncovered, until liquid thickens, about 30 minutes. Remove from heat and allow to cool slightly.
Step 2
In a large bowl, add ground beef, bread crumbs, garlic, egg and remaining salt and pepper. Mix until thoroughly combined. Shape into 4 patties. Broil or grill until internal temperature reaches 160° F.
Step 3
Place each burger on one half of a hamburger bun. Top with warm red onion jam, spinach leaves and crumbled blue cheese.
