Sweet Potato Casserole

Ingredients

  • Topping:
  • 5 sweet potatoes, peeled and sliced (or canned)
  • 1/2 cup packed brown sugar
  • 1/4 cup butter
  • 1 tablespoon milk or light cream
  • 1 tablespoon vanilla
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/2 (10.5 ounce) package miniature marshmallows
  • 1 cup packed brown sugar
  • 1/2 cup all-purpose flour
  • 3/4 cup Quaker quick cooking oats
  • 1/2 cup softened butter

Preparation

Step 1

1.Preheat oven to 350 degrees F (175 degrees C).

2.Boil sliced sweet potatoes in water until tender. Drain.

3.In a large bowl, blend the potatoes until creamy. Stir in the butter, brown sugar, milk, vanilla,cinnamon and nutmeg.

4.Spread the sweet potato mixture into a 9x13 inch pan. Sprinkle the miniature marshmallows over the top, then add streusel topping and bake at 350 degrees F (175 degrees C) until golden brown.


Topping:
mix 1 cup packed brown sugar, 1/2 cup all-purpose flour, 3/4 cup Quaker quick cooking oats with 1/2 cup softened butter
